Dandelion Salad

INGREDIENTS:
3 cups torn dandelion greens
1/2 red onion, chopped
2 tomatoes, chopped
1/4 lb sharp cheddar or gruyere cheese, cubed
¼ cup pine nuts, toasted

DRESSING INGREDIENTS:
1/4 cup vinegar
1 rounded tablespoon sugar
1/8 teaspoon celery seed
1/8 cup olive or vegetable oil
salt & freshly ground pepper 

PREPARATION INSTURCTIONS:
In a medium bowl, toss together dandelion greens, red onion, and tomatoes. Combine the salad dressing ingredients in a container with a tight seal...shake until sugar is disolved. Toast pine nuts in a dry pan until just fragrant.  Dress the salad, toss and add pine nuts and cheese cubes.
